Portions for 4 servings:
1lbs salmon steak cut in 4 pieces
1/2 tsp iodized salt
2lbs sweet potatoes
1/4 cup orange juice
1 tbsp brown sugar
1lbs cooked white rice (6oz of dry rice)
Flavor with salt or ginger
Cut the sweet potatoes in 1/2" pieces, place them in an oven dish which has a lid, pour the orange juice over then and sprinkle with the brown sugar. Close the lid and bake 1hour at 180°C (350F).
Bring water to boiling point and flavor with salt or ginger. Cook the rice 20mn in boiling water.
Put the salmon pieces in a cast iron dish with the skin toward the dish and sprinkle salt over the salmon.
Dress the plates with the slamon, the sweet patotoes and the rice. Serve immediately.
Recipe to try with a teaspoon of molasses in the sweet potatoes.
